Tucked away between the Pacific Coast and the Pala Mesa Mountains is 62 acres producing great grapes that are processed wine that was (until our discovery) enjoyed by only local restaurants and populace. We are pleased to present to you one of our favorite wineries from this area, Fallbrook Winery.
An ideal climate of warm days and cool nights allows for the grapes to develop the optimal sugar and acid levels level; add an experienced, award-winning and caring winemaker, and you have very flavorful and balanced wine. All the grapes are hand picked, hand sorted and bin fermented in 175-gallon tanks. Every part of the processes that can be done manually is done manually; this permits the winemaker greater control towards a wonderful finished product. The aging room with its French and American oak barrels allows the wine to arrive at the proper conditions for master winemaker Duncan Williams to say when to start the bottling process.
With no pretense or fancy tasting room (the winery is not even open to the public), Fallbrook simply concentrates on making the best wine possible.
